I went to Lambert Academy of Sugar Craft for a private cake decorating session for a belated Christmas party and it was the best decision I could've made! Scott was super responsive, communicative and accommodating right off the bat. We were able to come in on a Sunday night with no issues at all. I believe it was Lesi who taught the class, she's a great teacher, super kind and encouraging! Not only was it an amazing experience, the cakes were equally as amazing. I highly recommend for anyone who is thinking about booking with Scott and Lesi to do so ASAP!
I’ve just completed the six-week professional certification program, and I would like to describe my experience. I have baked before, but I have never decorated with fondant, or created beautifully decorated cakes. Cake decorating is something I have always wanted to learn and now that I am in my 40s decided to try something new. You might discover that you are naturally talented at decorating and It’s never too late to learn.
I walked away with a strong foundation of decorating and business knowledge that I will be able to build upon for years to come. I also gained a cake-decorating mentor and a business consultant from Lesi and Scott.
The facility: ample parking, and a safe and secure location, I was provided with a locker for my belongings. There is a break room “café” that had a microwave, coffee station, fridge, and water dispenser with hot and cold water. The facility is immaculate. Everything is extremely clean and organized. This is what you want to see in a facility that teaches baking, food handling, and sells custom cakes.
Classes: We started our program with Canadian Food Safety Certification. This information is an extremely important and valuable certification for anyone interested in preparing baked goods in a business setting or even for your own family. We learned about baking using the same tools and equipment you would have at home. We also were able to use commercial ovens and a commercial mixer. We discussed how to source and cost ingredients that will help you have a lucrative business.
We learned how to make incredible fillings, icings, and cakes. We also learned tricks on how to make the most delicious buttercream and how to keep cakes fresh and moist. We discussed allergy and specialty baking for food sensitivities. I learned how to make beautiful roses and peonies (and other flowers) out of Korean gum paste. We learned and practiced food photography. We learned how to make a sculpted cake; it was so fun. I didn’t think I could make something like that!
There are so many things to list. I also tried the macaroon class, which was life-changing. The macaroons are so good. These macaroons are better than ones that you find at popular bakeries and I’m not exaggerating. Lesi baked a pie (because she’s nice like that) for our class to try right before thanksgiving. It was so amazing! I’m taking the pie class later this month.
If you’ve read this far good for you! I could go on and on about the experience I’ve had at Lambert Academy and the lifelong friendships I’ve made, in only six weeks! You should really give this program a try. Education and investing in yourself are never a waste of time.
I was a student in the “Simply Buttercream” workshop - it was really great! I knew nothing at the start and l gained a ton of both knowledge and skills. The instructor ((Crystal) was awesome - super knowledge and skilled, very patient and kind. I left with a beautiful cake that tasted amazing and made me feel like I have the skills to keep practicing, experimenting and perfecting my techniques. The academy also has a store with the equipment needed for what I learned in the workshop. I’ll definitely be back!
Awesomeness! I took the fundamentals course. The instructor was great. The class size was great. The course was well structured and fluid. Time flew by but didn’t feel like you weren’t absorbing because of the instructors pace wasn’t so fast you couldn’t follow. If you have thought about taking a class to “see if you’ll like it” take it you will NOT be disappointed. I love decorating cakes but everything I’ve learned was on videos and I learned SO MUCH and totally upped my knowledge! Thank you Lambert Academy of Sugar Craft! It was amazing!!
I completed the Certified Professional Cake Designer Program in 2019. It was such an awesome experience! As I wanted to open my own business, I took all the hobby courses and the master floral course. Excellent courses and well worth the money.
I enjoy Lambert Academy so much that I took the entire Cake Designer Program again in 2021! I also took all the hobby classes again just as a refresher! I really loved the second part of the program which is the business aspect. It was very informative and got me on the right track.
I am opening my business in the next few weeks. I would never have been able to do so if it wasn't for Lambert Academy! Thank you so much!
