I can't believe what a difference it makes to cook with sharp knives. I highly recommend.
I am a professional sharpener. That said, whenever I get a knife from Jake at CCE, I have him sharpen it. Why? Two reasons:
1. It makes a little less work for me, and
2. Jake sharpens them every bit as well as I can.
And if I have sharpened 15-30 knives in a day, the last thing I want to do is sharpen a few more for myself. Having Jake at CCE sharpen them is a little treat I give myself.
If you haven't already had Jake sharpen knives for you, give him a try. You won't be disappointed.
I've bought dozens of budget knives from Jake that had his polished edges on them, and simply due to that, I invariably end up carrying them over the factory edges on my premium knives, because his edges are SCREAMING sharp, and they scare the crud out my friends cuz they're scary sharp. Definitely recommend his sharpening skills and for the price it's a no brainer
Jake put an edge on a Oknife Splint for me and it was scalpel sharp. Not only was the knife incredibly sharp the bevels were even across the whole blade and each side was identical. I’ve had other sharpening services ruin a knife by lack of skill or not taking care, but with Jake your knives are in very safe hands. Please stay safe and keep on cutting.
