I am always skeptical buying Wagyu in North America but after exchanging a few emails with Wilco, I decided to give Subtilia a chance. The ordering/shipping process was very easy, professional and well taken care of. I pan seared my rib eye (3 mins/side on medium heat in a cast iron) and tenderloin (1 min/side) and tented the beef and let it rest for 5 mins. Had I been served this in a restaurant I would have bet that it was from Japan. The beef is absolutely amazing!!!!! You definitely have to give it a try but read up on how to cook Wagyu because you can easily ruin it on high heat.

Being a huge meat eater and having travelled to a good amount of countries I think it’s fair to say I’ve had a large variety of beef. But the Wagyu from Subtilia Ranch is for sure the best meat I’ve ever encountered. I prefer to cook their steaks “Sous Vide” style to ensure the right doneness. A little salt and pepper before searing and voila... a party in your mouth! The natural flavours require no meat rubs to be used or sauces to be accompanied. Lastly I haven’t used a steak knife since. The tenderness is unlike anything. 5 stars all the way!
